Restaurant Mosaic opened its doors at Château des Tesnières in Brittany, France, on the 1st of May 2025, beginning a new chapter in a journey that spans more than fifteen years.

Founded by Chef Chantel Dartnall, the Restaurant became known for its botanical approach to cuisine, drawing inspiration from nature, seasonality, and a profound respect for the beauty of exceptional ingredients.

Mosaic et sa magie

The magic of Mosaic is holistic dining experienced through all the senses: taste, aroma, texture, touch, mouthfeel and satiation, leaving guests inspired and revitalised. Throughout history, people have searched for foods believed to embody the energies of love, protection, vitality, strength and prosperity. Chantel draws inspiration from this enduring connection between nature and wellbeing, making use of delicate herbs, flowers and botanicals that are far more than mere garnish. They become essential ingredients, inviting guests to immerse themselves in the beauty and abundance of the natural world.

The essence of each ingredient is captured in her delicate dishes, poems of nature that awaken the senses and nourish the soul. Inspired by French masters such as Michel Bras, Pierre Gagnaire, Alain Passard and Guy Savoy, Chantel creates according to the inspiration she draws from the natural, emotional and subliminal influences of her surroundings. Central to her philosophy is revealing the inherent value of freshness and seasonality, whether drawn from the earth, the forest, the garden or the sea. She believes that food should do more than satisfy hunger; it should enrich our wellbeing, deepen our connection to nature and enhance our lives.

Each composition on her menu is intended to evoke moments of wonder, reflection and delight. Guests are carried through shifting emotions and memories as harmonious layers of flavour, aroma and texture unfold before them. It is more than foraging. It is about being deeply attuned to the essence of each ingredient and allowing nature itself to speak through every creation. Herbs and flowers are used not only to nourish, but to invigorate and enthral, transforming the preparation, cooking and sharing of food into something approaching ritual. Through her botanical cuisine, Chantel strives to create experiences that linger in the memory long after the final course has been served.

Through her botanical cuisine, Chantel has guided guests on a culinary journey of discovery and indulgence. At Restaurant Mosaic, her meticulous approach to fine dining and deep respect for seasonal produce have shaped a cuisine that celebrates the beauty, flavour and emotion found within nature’s finest ingredients. Drawing inspiration from the changing seasons, each dish reflects a commitment to freshness, artistry and a profound connection to the natural world.

Having travelled extensively throughout her career, Chantel eventually found a second home in France, where a shared reverence for terroir, craftsmanship and culinary heritage resonated deeply with her own philosophy. The landscapes, traditions and rhythms of French life further nurtured the botanical vision that has long been at the heart of Restaurant Mosaic.

After fifteen years at The Orient Boutique Hotel, Restaurant Mosaic closed its South African chapter on 28 March 2021. On 1 May 2025, the restaurant opened its doors at Château des Tesnières in Brittany, France, where its story continues amongst the gardens, woodlands and changing seasons of its new home.
