Chef Chantel and the Restaurant Mosaic team are privileged to be supported by our esteemed Wine Director, Cobus du Plessis, whose dedication to excellence ensures that our guests have access to some of the finest wines from across the globe.
A pioneer in his field, Cobus was among the first in South Africa to be inducted into L’Ordre des Coteaux de Champagne in 2013. In 2018, he was appointed Commandeur of the Commanderie de Bordeaux Afrique du Sud, the South African chapter of the Grand Conseil du Vin de Bordeaux, and has since been promoted to Vice-Maître, a testament to his commitment and expertise within this distinguished circle of wine connoisseurs.
Our wines are housed in cellars meticulously maintained at 13°C and 70% humidity, conditions that ensure each bottle is preserved at its absolute best. At the heart of our wine programme lies a custom-developed digital system created exclusively for Restaurant Mosaic. This proprietary platform provides our team with immediate access to every wine in the collection, together with detailed tasting notes, accolades, vintage information, articles and imagery, enabling seamless, informed and personalised wine service at every moment.


Our wine philosophy is rooted in a deep commitment to excellence, discovery and timeless elegance. We believe that exceptional wines, from celebrated estates to rare vintages and revered Grand Crus, should form an integral part of the Mosaic experience. Each bottle is selected not only for its provenance and character, but for its ability to enhance and elevate the dishes it accompanies.
Central to this philosophy is a celebration of the extraordinary diversity found within the world of wine. We invite our guests to journey through regions, vintages and styles, whether through thoughtfully curated wine pairings or personalised recommendations from our sommelier team. Each visit presents an opportunity to discover something new and to deepen one’s appreciation for the artistry of winemaking.
Our sommeliers are guided by the belief that every wine should be served at the height of its expression, when structure, complexity and balance exist in perfect harmony. Understanding when a wine has reached this moment is both a responsibility and an art, requiring patience, knowledge and intuition.
At Restaurant Mosaic, wine is more than a pairing. It is a conversation between vineyard and kitchen, between terroir and season, between the people who craft it and those who gather to enjoy it. Each glass forms part of the story, enriching the experience and creating moments that linger long after the final course.
This extraordinary collection has travelled with us on a remarkable journey, from Restaurant Mosaic at The Orient in Pretoria, South Africa, to its new home at Château des Tesnières in Brittany, France. Throughout the château’s four-year restoration, great care was taken to preserve and protect every bottle. From rare magnums and hidden treasures to mature vintages rich with character, each wine forms part of a collection shaped by time, passion and discovery.
Our passion for wine continues to evolve, and each year the cellar is enriched with carefully selected new vintages and discoveries. France and South Africa remain at the heart of our curation, and we are particularly proud of our extensive selection of Champagne and Burgundy, chosen to complement Chef Chantel’s distinctive botanical cuisine.
Today, the collection resides within our purpose-built cellars at Château des Tesnières, where it continues to grow and mature. Guided by a deep respect for the craft of winemaking, we remain committed to preserving a cellar that reflects both heritage and exploration, offering guests the opportunity to discover wines of exceptional quality and character.
During its years at Restaurant Mosaic at The Orient, the cellar earned widespread recognition for the depth and diversity of its collection, comprising more than 80,000 bottles representing over 5,500 South African and international labels. The collection received numerous awards and accolades and remains an enduring part of Restaurant Mosaic’s legacy.
