Mosaïc Restaurant Nominated for the Prestigious La Liste
A remarkable recognition for Chef Chantel Dartnall and the team at Mosaïc
Just one year after opening its doors at the magnificent Château des Tesnières in Torcé, Brittany, Mosaïc Restaurant and its chef, Chantel Dartnall, have been nominated for the prestigious La Liste, one of the world’s most respected guides to exceptional restaurants.
The recognition was recently highlighted in an article by Noëlline Garon, published by Hit West on September 10, 2026, titled “Which Breton restaurant could be included in the prestigious ‘List’?”
For Chef Chantel Dartnall and the entire Mosaïc team, the nomination represents an important milestone in the restaurant’s young journey.
From South Africa to Brittany
Originally from South Africa, Chantel Dartnall brings a unique international perspective to the culinary landscape of Brittany.
After establishing her reputation in Pretoria, Chantel was captivated by the beauty of the Château des Tesnières and the surrounding region. It was the quality of the local produce, the dedication of its producers and the richness of French culinary tradition that inspired her to make Brittany her new home.
For Chantel, France represents something particularly special:
“In South Africa, there are many great chefs, but for me, the best cuisine is French cuisine.”
Today, Mosaïc reflects this meeting of cultures—combining Chantel’s South African heritage with the extraordinary ingredients and traditions of Brittany.

A botanical approach to cuisine
At the heart of Chantel’s cooking is what she describes as botanical cuisine.
The gardens surrounding the Château play an important role in the Mosaïc experience, providing an abundance of edible flowers, herbs and fruits that find their way onto the plate.
From borage and agapanthus to daylily and aquilegia, the kitchen works with a remarkable variety of botanical ingredients, alongside fruits such as apples, pears, figs and cherries.
This connection with nature is more than a culinary technique. It forms part of the identity of Mosaïc—creating dishes that are deeply connected to the seasons, the landscape and the exceptional produce of the region.
Chantel also continues to honour her South African roots through carefully chosen ingredients such as rooibos and honeybush, creating a distinctive culinary language that brings together two very different worlds.
“It is a huge honour for our team, which rewards a lot of work, passion and commitment.”
Celebrating Brittany’s gastronomic heritage
The nomination also shines a light on Brittany as an increasingly recognised gastronomic destination.
As highlighted in Noëlline Garon’s article, the region is already home to restaurants featured in La Liste, including Le Coquillage in Saint-Méloir-des-Ondes and Maison Kervarrec in Saint-Grégoire.
For Chantel, the strength of Brittany lies in the extraordinary relationship between its chefs and producers.
“We are lucky to have very talented producers and chefs here. It is these riches that make Ille-et-Vilaine and Brittany more broadly a recognised gastronomic destination.”
Mosaïc is proud to be part of this growing culinary community and to contribute its own chapter to the gastronomic story of the region.
Looking towards La Liste
La Liste brings together the world’s most highly regarded restaurants, drawing on gastronomic guides, reviews from the international press and feedback from diners.
For Mosaïc, being nominated so soon after opening is a significant acknowledgement of the team’s dedication and vision.
The official La Liste selection is due to be unveiled in November 2026, and the Mosaïc team now looks forward to discovering where this extraordinary journey will lead.
For Chef Chantel Dartnall, however, the recognition is ultimately about more than a ranking. It is an encouragement to continue pursuing the philosophy that has shaped Mosaïc from the very beginning: exceptional produce, botanical creativity, French culinary excellence and a deeply personal connection to nature.
