She was raised in the village of Ga-Matlala, just outside Polokwane in Limpopo, South Africa. Growing up in the vibrant heart of the province, she was surrounded by rich traditions, flavourful food, and a strong sense of community. It was during these formative years, immersed in the aromas of home-cooked meals and guided by her cultural heritage, that her passion for food first took root.

Her professional culinary journey began fifteen years ago at Restaurant Mosaic at The Orient in Pretoria. There, she joined the award-winning team led by Chef Chantel Dartnall, celebrated internationally for her unique Botanical Cuisine. Over the years, Johanna has developed an intuitive working relationship with Chef Chantel, often able to anticipate her needs and understand her vision from the simplest instruction.

Johanna’s time at Restaurant Mosaic has been marked by growth, dedication, and many proud milestones. From mastering intricate techniques and contributing to the preparation of complex tasting menus, to pursuing her personal love of baking artisanal breads and special occasion cakes, she has remained committed to excellence in every detail.

Through determination, curiosity, and a deep respect for the art of fine dining, Johanna has risen through the ranks to become a trusted and essential member of the Kitchen Brigade. Her story is one of resilience and commitment, shaped by both her professional experiences and the values instilled in her from her upbringing—humility, hard work, and heartfelt hospitality.

As she embarks on this next chapter with Restaurant Mosaic at Château des Tesnières in Brittany, France, Johanna brings with her a wealth of knowledge, a quiet strength, and a continued passion for her craft.
